At HM Hotels, we are committed to innovation as a means of moving towards a more sustainable hotel model. That is why we have introduced Winnow, an artificial intelligence-based solution that enables us to measure, analyse and reduce food waste in our kitchens and buffets.
Thanks to real-time data analysis, our teams can identify which foods are most frequently wasted and make more efficient decisions regarding production and service planning. This enables us to optimise resources, reduce our environmental impact and encourage more responsible consumption without compromising the quality of our guests’ experience.
The results show that technology can be a powerful ally in the drive for sustainability. In our pilot project, we managed to reduce food waste by up to 48 per cent, whilst also cutting down on the unnecessary use of resources and reinforcing our commitment to more efficient and responsible management.
